Zucchini Bread

Makes 24 servings

Same as the other one, just with eggs instead of egg beaters.

Ingredients
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/4 teaspoon baking powder
3 eggs
3/4 cups white sugar
3/4 cup brown sugar
3 teaspoons vanilla extract
1 cup applesauce
3 cups grated zucchini
Directions
  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Sift together flour, salt, soda, cinnamon, baking powder in a large bowl.

  3. Add and mix well sugar, vanilla, and applesauce to dry ingredients.

  4. Beat eggs in a smaller bowl.

  5. Add zucchini to egg mixture.

  6. Add zucchini and eggs to large bowl, mixing well.

  7. Pour into 2 ungreased loaf pans.

  8. Bake at 350 degrees F (175 degrees C) for 1 hour.
