An easier, certainly healthier version of an Alfredo dish. Add chicken or shrimp if you wish. Broccoli or asparagus would also be tasty in this dish. Hope you like it.
| 1 | tbs. margarine |
| 2 | tsp. minced garlic |
| 1 | tbs. flour |
| 1 1/3 | c skim milk |
| 2 | tbs. light cream cheese |
| 1 | cup fresh grated parmesan cheese |
| 8 | oz dry Hodgson Mill fettuccine |
| 2 | tsp chopped parsley |
- Cook pasta according to directions.
- Melt margarine. Add garlic and saute one minute. Stir in flour. Gradually add milk, stir with wire whisk. Cook 8 minutes or until thickened & bubbling. Stir constantly. Stir in cream cheese and cook 2 minutes. Add 1 C parmesan cheese, stirring til melted. Serve over pasta.
