Fettuccine Alfredo Recipe

Makes 4 servings


An easier, certainly healthier version of an Alfredo dish. Add chicken or shrimp if you wish. Broccoli or asparagus would also be tasty in this dish. Hope you like it.

Ingredients
1 tbs. margarine
2 tsp. minced garlic
1 tbs. flour
1 1/3 c skim milk
2 tbs. light cream cheese
1 cup fresh grated parmesan cheese
8 oz dry Hodgson Mill fettuccine
2 tsp chopped parsley
Directions
  1. Cook pasta according to directions.

  2. Melt margarine. Add garlic and saute one minute. Stir in flour. Gradually add milk, stir with wire whisk. Cook 8 minutes or until thickened & bubbling. Stir constantly. Stir in cream cheese and cook 2 minutes. Add 1 C parmesan cheese, stirring til melted. Serve over pasta.
