Side dish, originally for 4 servings but I used it for 6 servings. Made well with red potatoes, yellow finns or new white potatoes. From the Vegan Gourmet.

Ingredients
| 1 |
lb potatoes |
| 1 |
tbsp extra virgin olive oil |
| 1/4 |
cup parsley, fresh leaves, minced |
| 1/8 |
tsp garlic powder |
| 1 |
pinch black pepper |
| 1 |
pinch salt |
Directions
- Scrub the potatoes and dice them.
- Drop them into rapidly boiling water and cook about 10 to 15 minutes, until tender but not mushy. Check them carefully.
- Drain well and toss in a bowl with the olive oil.
- Toss with the parsley, garlic, pepper and salt.
- Serve hot.
