Parsley Red Potatoes

Makes 6 servings

Side dish, originally for 4 servings but I used it for 6 servings. Made well with red potatoes, yellow finns or new white potatoes. From the Vegan Gourmet.

Ingredients
1 lb potatoes
1 tbsp extra virgin olive oil
1/4 cup parsley, fresh leaves, minced
1/8 tsp garlic powder
1 pinch black pepper
1 pinch salt
Directions
  1. Scrub the potatoes and dice them.

  2. Drop them into rapidly boiling water and cook about 10 to 15 minutes, until tender but not mushy. Check them carefully.

  3. Drain well and toss in a bowl with the olive oil.

  4. Toss with the parsley, garlic, pepper and salt.

  5. Serve hot.
