Oat Bran muffins.
| 1 1/4 | cup 2% milk |
| 1 | cup low-fat plain yogurt |
| 2 | tsp ground ginger, (or cinnamon) |
| 3 | tbsp olive oil |
| 1 | cup wheat germ, Raw |
| 1/2 | cup raisins, (or other dried fruit) |
| 2 | tsp baking powder |
| 2 | tsp baking soda |
| 2/3 | cup honey |
| 60 | grams oat bran |
| 2 3/4 | cup uncooked wheat bran |
| 1 | cup wheat flour |
| 2 | egg |
- Combine the dry ingredients in one bowl and mix them well. In another bowl beat the eggs and then add the rest of the wet ingredients with the optional raisins coming last, and mix well as each new ingredient is added. Fold the wet into the dry, mixing only enough to moisten the dry ingredients thoroughly.
- Put the mixture into a greased muffin tin and bake at 175C/350F for 20-25 minutes.
