Very yummy slightly better for you spinach artichoke dip!

Ingredients
6 artichoke hearts
1 lb spinach leaves
8 oz light sour cream
2 oz fat free cream cheese
2 oz romano cheese
2 cloves garlic
2 tblsp extra virgin olive oil
Directions
  1. In large nonstick skillet, sautee garlic in olive oil. Slowly add fresh baby spinach leaves, turning as they wilt. When all spinach leaves are added add chopped artichoke hearts. Stir until all is incorporated. In 9x9 baking dish, add sour cream and cream cheese. Pour spinach artichoke mixture over and stir to combine. Sprinkle romano cheese (I also sometimes use asiago and parmasan as well) over dish and bake at 350 for 15 minutes or until top is light golden brown. Serve with tortilla chips, pita chips, or with toasted bread.
