Spicy chicken soup with big vegetables
| 200 | g chicken, thigh |
| 20 | g chorizo sausage |
| 2 | leeks |
| 1/2 | cup of sweet peppers |
| 1 | courgette |
| 2 | carrots |
| 1/8 | cup of capsicum |
| 1 | baking potato |
| 1 | pint of water |
- Put a deep saucepan on the heat, add the chorizo sausage to dry hot pan and when it releases the fat put the skinless chicken thighs to brown this will take a few minutes.
- Whilst the chicken is browning slice all the vegetables into bite size chunks except for the Capsicum which you slice thinly.
- Put all the vegetables in the saucepan, stir round and add 1 pint of water turn the heat down and simmer for 40 minutes.
- Serve in deep bowl and sprinkle chopped corriander
