Chunky Chicken Soup Recipe

Spicy chicken soup with big vegetables

Ingredients
200 g chicken, thigh
20 g chorizo sausage
2 leeks
1/2 cup of sweet peppers
1 courgette
2 carrots
1/8 cup of capsicum
1 baking potato
1 pint of water
Directions
  1. Put a deep saucepan on the heat, add the chorizo sausage to dry hot pan and when it releases the fat put the skinless chicken thighs to brown this will take a few minutes.

  2. Whilst the chicken is browning slice all the vegetables into bite size chunks except for the Capsicum which you slice thinly.

  3. Put all the vegetables in the saucepan, stir round and add 1 pint of water turn the heat down and simmer for 40 minutes.

  4. Serve in deep bowl and sprinkle chopped corriander
