Sweet and spicy pumpkin bread with chocolate chips.
| 3 1/2 | cups flour |
| 3 1/2 | cups sugar |
| 2 | tsp baking soda |
| 1 | tsp salt |
| 1 | tsp cinnamon |
| 1 | tsp nutmeg |
| 1 | tsp vanilla |
| 4 | eggs |
| 29 | oz pumpkin |
| 1 | cup canola oil |
| 16 | oz milk chocolate chips |
- Preheat oven to 350 degrees, grease and lightly flour 4 medium loaf pans, set aside.
- Stir together flour, sugar, baking soda, salt, cinnamon and nutmeg until well combined.
- In a separate bowl, beat eggs well, add pumpkin, vanilla, and oil and stir until combined. Add to dry mixture and beat until smooth, scraping down sides of bowl several times, about 2-3 minutes. Add chocolate chips and stir till combined.
- Pour into greased loaf pans, and bake for one hour or until toothpick inserted in center comes out clean. Let cool for 30-45 minutes, run a knife around the sides of the pan and turn it over to get bread out. Slice into 10 slices per loaf pan.
