Pumpkin Bread with Chocolate Chips Recipe

Makes 40 servings


Sweet and spicy pumpkin bread with chocolate chips.

Ingredients
3 1/2 cups flour
3 1/2 cups sugar
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla
4 eggs
29 oz pumpkin
1 cup canola oil
16 oz milk chocolate chips
Directions
  1. Preheat oven to 350 degrees, grease and lightly flour 4 medium loaf pans, set aside.

  2. Stir together flour, sugar, baking soda, salt, cinnamon and nutmeg until well combined.

  3. In a separate bowl, beat eggs well, add pumpkin, vanilla, and oil and stir until combined. Add to dry mixture and beat until smooth, scraping down sides of bowl several times, about 2-3 minutes. Add chocolate chips and stir till combined.

  4. Pour into greased loaf pans, and bake for one hour or until toothpick inserted in center comes out clean. Let cool for 30-45 minutes, run a knife around the sides of the pan and turn it over to get bread out. Slice into 10 slices per loaf pan.
