Sgbear's Quick and Easy Chicken Pot Pie Recipe

This was my attempt at getting the kids (and my husband) to eat more veggies. It is made in bowl fashion w/o the top on. The kids love to eat the "bowl".

Ingredients
4 cups gravy
1 chicken breast
2 cup corn
2 cup green beans
2 cup carrots
2 cup broccoli
1 cup onions
6 biscuits
2 cups skim milk
2 cups water
1 tbls olive oil
Directions
  1. preheat oven to 350

  2. mix 2 cups skim milk and 2 cups water to 2pks McCormick Country Gravy Mix (makes 4 cups gravy)

  3. cook all veggies till tender

  4. saute onions in olive oil till tender

  5. dice brocolli, green beans, carrots and chicken breast

  6. mix veggies and chicken and onions into gravy and set aside but keep warm

  7. roll out biscuits (I use pillsbury golden flaky layer) flat and thin enough to cover oven safe bowls

  8. take 4 oven safe bowls and use upside down on cookie sheet. place rolled out biscuits over bowls and bake in oven for 10 minutes.

  9. remove biscuit bowls from oven safe bowls and allow to cool completely.

  10. spoon gravy/veggie mixture into bowls and enjoy.
