Adapted from Silver Palate Cookbook. Original recipe called for 2 sticks of butter--decadent. I cut back to 2 TB. It's still a B- in nutritional analysis, but the best chicken noodle soup I've ever had. The kosher salt is a must. Together with the vinegar, it gives this soup a marvelous flavor.

Ingredients

medium leeks (white part only) |

tablespoons cider vinegar |

tablespoons unsalted butter |

medium carrots, peeled and finely chopped |
| 3 |
celery ribs, finely chopped |

teaspoon kosher salt |
| 1 |
teaspoon freshly ground pepper |

cups chicken broth or stock, low sodium or homemade |

cup dry white wine |
| 24 |
ounces boneless skinless chicken breast |
| 8 |
medium mushrooms |
| 2 |
cups cooked thin egg noodles |
| 4 |
ounces green beans, ends trimmed, diagonally sliced |
| 3 |
tablespoons parsley (preferably Italian), chopped |
Directions
- Cut leeks lengthwise in half and soak in the water mixed with the vinegar for 1 minutes. Drain and rinse the leeks. Cut into fine dice.
- Melt butter in large heavy stock pot over medium-low heat. Add the leeks, carrots, celery, kosher salt, and pepper. Cook gently for 5 minutes. Remove from heat.
- Heat the chicken stock and wine in a large saucepan to boiling. Add chicken, reduce heat, and simmer uncovered for 15 minutes. Remove chicken and let cool.
- Add stock and mushrooms to the vegetables. Simmer uncovered over low heat 10 minutes.
- Add noddles* and green beans and simmer for another 5 minutes. Remove from heat.
- Shred chicken breasts and add to soup. Add chopped parsley and stir well. Serve immediately.
- *I keep the noodles separate if there will be leftover soup. They swell up a lot and you won't have much broth the next day. If you like a stewlike soup, go ahead and add them. If not, add some warm noodles to each bowl as you serve.
