Split Pea Soup Great hot or cold!
| 2 | cups split peas |
| 32 | oz vegetable broth |
| 48 | oz water |
| 2 | tablespoons butter |
| 4 | small carrots (chopped) |
| 1 | medium onion (finely chopped) |
| 1 | tbsp pepper |
| 1 | tsp salt |
- Add broth and water to pot
- add in one bag split peas
- add butter, carrots and onions
- lightly cover and bring to rapid boild for 30 minutes
- add seasonings
- drop to a simmer for 30 minutes longer
- If not smooth enough you can cook longer or puree
