Frattata, Bell Pepper and Parmesan Cheese Recipe

3 eggs and no pasta

Ingredients
3 eggs
1/8 cup soy milk
1/2 cup onion, chopped
1/2 cup red bell pepper,chopped
1/6 cup Parmesan cheese, grated
Directions
  1. Preheat oven to 425 F

  2. Spray oven proof skillet. Heat on medium. Add onion and pepper and cook, stirring frequently, until tender, about 7 minutes.

  3. In a bowl, whisk eggs, Parmesan, milk and hot pepper sauce. Pour over onion mixture; cover and cook until egg mixture is set around edge, about 3 minutes. Remove cover and place skillet in oven. Bake until frittata is set in the middle, about 6 minutes longer.
