Basic Pancakes Recipe

Makes 12 servings


Basic homemade pancake batter, easy to alter with some different ingredients if necessary. Instructions for use with a Vita-mix.

Ingredients
1 1/4 cups milk
1 egg
2 tbsp extra virgin olive oil
1/2 tsp salt
2 tbsp sugar
1 cup all purpose flour
2 tsp baking powder
Directions
  1. Place milk, egg, oil, salt and sweetener in Vita-Mix container. Secure 2 part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #5. Run for 5 seconds. Remove lid plug. Add flour and baking powder through lid opening. Replace lid plug. Run for 10 seconds or until mixed.

  2. Pour 1/4 cup (60ml) batter onto hot, prepared griddle and bake.

  3. Note: if using whole wheat flour, use brown sugar instead of regular sugar or other sweetener.
