Spicy Cod

Makes 2 servings

Chop, Spice, and Simmer. Easy 30 minute meal

Ingredients
1 teaspoon Olive Oil
1 medium onion (diced)
1 red bell pepper (diced)
1 garlic clove (minced)
1 cup tomato (diced)
1/4 teaspoon Cumin
1/8 teaspoon Crushed Red Pepper
3/4 lbs Cod
Directions
  1. In a large covered nonstick fry pan, Simmer Onion, Red Pepper, and crushed garlic in olive oil for 2 minutes.

  2. Add tomato and seasonings. Cook over medium heat for 5 minutes.

  3. Add Fillets to bottom of pan and spoon sauce over fillets to cover fish.

  4. Cover and cook 10 minutes until fillets are white and flake easily.
