Ingredients

teaspoon Olive Oil |

medium onion (diced) |
| 1 |
red bell pepper (diced) |
| 1 |
garlic clove (minced) |
| 1 |
cup tomato (diced) |
| 1/4 |
teaspoon Cumin |
| 1/8 |
teaspoon Crushed Red Pepper |
| 3/4 |
lbs Cod |
Directions
- In a large covered nonstick fry pan, Simmer Onion, Red Pepper, and crushed garlic in olive oil for 2 minutes.
- Add tomato and seasonings. Cook over medium heat for 5 minutes.
- Add Fillets to bottom of pan and spoon sauce over fillets to cover fish.
- Cover and cook 10 minutes until fillets are white and flake easily.
