| 150 | ml sunflower oil |
| 1 | tsp vanilla extract |
| 250 | g carrots, grated |
- Pre-heat oven 180 degrees
- Put the flour, sugar, baking powder and cinnamon into a large bowl and stir to mix
- Make a well in the centre
- Stir in the eggs, oil, vanilla extract and carrots
- Spoon the mixture into 10 muffin cases
- Bake for 25-30 mins until the muffins are well risen and golden brown
- Cool on a wire tray
