Carrot Muffins Recipe

Ingredients
175 g self raising flour
125 g light brown sugar
2 tsps baking powder
1 tsp cinnamon
3 eggs, beaten
150 ml sunflower oil
1 tsp vanilla extract
250 g carrots, grated
Directions
  1. Pre-heat oven 180 degrees

  2. Put the flour, sugar, baking powder and cinnamon into a large bowl and stir to mix

  3. Make a well in the centre

  4. Stir in the eggs, oil, vanilla extract and carrots

  5. Spoon the mixture into 10 muffin cases

  6. Bake for 25-30 mins until the muffins are well risen and golden brown

  7. Cool on a wire tray
