Chocolate Chip Pistachio Biscotti Recipe

Italian Cookies

Ingredients
2 cups flour
3/4 cup yellow cornmeal
1 1/2 teaspoons baking powder
3 large eggs
1/4 cup whiskey
1 cup sugar
1/2 cup chocolate chips
1/2 cup nuts
Directions
  1. Combine eggs and sugar and beat until fluffy-ish. Add 1/4 cup amaretto (whiskey was listed in calorie counter) and beat. Add dry ingredients and beat until combined. Stir in nuts and chips. Let stand 5 minutes.

  2. Shape into 2 logs and bake 325° for 35 minutes.

  3. Let cool 5 minutes. Cut into 1/2 inch slices.

  4. Bake 25 minutes more.
