A variation on traditional Pico de Gallo salsa using parsley instead of cilantro for those times when you just can't find any cilantro.
| 1 | large tomato, diced |
| 1/4 | medium onion, finely chopped |
| 1/4 | cup fresh lime juice |
| 1 | cup parsley, only leaves, loosely packed |
Combine all ingredients in a small bowl and chill until cold, about 30 minutes. Serve cold. Keep refrigerated and use within 2 or 3 days.Categories
