Close Enough Pico De Gallo Recipe

A variation on traditional Pico de Gallo salsa using parsley instead of cilantro for those times when you just can't find any cilantro.

Ingredients
1 large tomato, diced
1/4 medium onion, finely chopped
1/4 cup fresh lime juice
1 cup parsley, only leaves, loosely packed
Directions
Combine all ingredients in a small bowl and chill until cold, about 30 minutes. Serve cold. Keep refrigerated and use within 2 or 3 days.
