Flank Steak Wrap with Caramelized Onions and Blue Cheese

Makes 4 servings

Up scale comfort food from Cooking Light. This was an instant successes with my family!

Ingredients
1/2 teaspoon salt
1/2 teaspoon black pepper
2 garlic cloves, minced
1 pound flank steak, trimmed
1 Cooking spray
3 medium onion (6 cups vertically sliced)
1/2 cup (2 ounces) crumbled blue cheese
1/4 cup fat-free mayonnaise
4 flour tortillas
Directions
  1. Combine first 3 ingredients; rub evenly over steak. Cover and chill 2 hours.

  2. Preheat broiler.

  3. Place steak on a broiler pan coated with cooking spray; broil 7 minutes on each side or until done. Cut steak diagonally across grain into thin slices.

  4. While steak cooks, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion to pan; cover and cook 10 minutes or until golden brown, stirring frequently.

  5. Combine cheese and mayonnaise; spread 2 tablespoons on each tortilla. Top each with 3 ounces steak and 1/2 cup onion; roll up.
