Cream of Asparagus Soup

Makes 4 servings

Tasty pale green soup. Very good.

Ingredients
1 1/2 lbs asparagus
3/4 cup Chopped onion
1 tbsp cooking oil
2 tsp chicken bouillon powder
2 tbsp all purpose flour
3/4 tsp salt
1/4 tsp pepper
2 cups skim milk
Directions
  1. Cook asparagus in water til tender

  2. Drain

  3. Cut asparagus spears into 2 inch pieces

  4. Sauté onion in oil until soft

  5. Add asparagus

  6. Combine bouillon powder, flour, salt and pepper in medium bowl

  7. Stir in milk until smooth

  8. Gradually stir into asparagus mixture

  9. Heat and stir until boiling and thickened.

  10. Cool slightly

  11. Put into blender

  12. Process in batches until smooth

  13. Return to saucepan and heat through and serve.
