Individual Lemon Fluffs Recipe

Like an unbaked cheesecake

Ingredients
410 g evaporated milk, light
400 g condensed milk
190 g gingernut biscuits
55 g margarine
50 ml lemon juice
Directions
  1. For the base:

  2. Crush biscuits

  3. Add to saucepan with melted margarine

  4. Press down mixture into 10 small serving bowls

  5. Cook at 100C for 15mins

  6. Allow to cool

  7. For the topping:

  8. Mix small can of sweetened condensed milk with larger can of unsweetened evaporated milk.

  9. Add lemon juice until mixture thickens.

  10. Spoon mixture on top of bases and leave in fridge for 4 hours.
