Like an unbaked cheesecake
| 410 | g evaporated milk, light |
| 400 | g condensed milk |
| 190 | g gingernut biscuits |
| 55 | g margarine |
| 50 | ml lemon juice |
- For the base:
- Crush biscuits
- Add to saucepan with melted margarine
- Press down mixture into 10 small serving bowls
- Cook at 100C for 15mins
- Allow to cool
- For the topping:
- Mix small can of sweetened condensed milk with larger can of unsweetened evaporated milk.
- Add lemon juice until mixture thickens.
- Spoon mixture on top of bases and leave in fridge for 4 hours.
