Talapia N' Tomatoes Recipe

Ingredients
8 ounces , tilapia fillets
1 spray vegetable oil
1 1/3 teaspoons thyme
1 cup chopped tomatoes
1/6 cup olives, green coarsely chopped
1 dash pepper
1 clove garlic, minced
1/6 cup red onion, finely chopped
1/3 tbsp lime juice, fresh
Directions
  1. Preheat oven to 400 degrees.

  2. Spray a shallow baking dish with oil.

  3. In a bowl stir together the other ingredients.

  4. In the prepared baking dish arrange the fillets, skin sides down, season them with salt, and spoon the tomato mixture over them.

  5. Bake the fish, uncovered, in the middle of the oven 15 to 20 minutes, or until it just flakes.
