| 8 | ounces , tilapia fillets |
| 1 | spray vegetable oil |
| 1 1/3 | teaspoons thyme |
| 1 | cup chopped tomatoes |
| 1/6 | cup olives, green coarsely chopped |
| 1 | dash pepper |
| 1 | clove garlic, minced |
| 1/6 | cup red onion, finely chopped |
| 1/3 | tbsp lime juice, fresh |
- Preheat oven to 400 degrees.
- Spray a shallow baking dish with oil.
- In a bowl stir together the other ingredients.
- In the prepared baking dish arrange the fillets, skin sides down, season them with salt, and spoon the tomato mixture over them.
- Bake the fish, uncovered, in the middle of the oven 15 to 20 minutes, or until it just flakes.
