large zucchini |

oz stove top stuffing mix |
Directions
- Preheat oven to 350. Lightly coat a 9- by 13-inch baking dish with cooking spray.
- Cut off ends of squash,cut in half lengh-wise, and remove guts. Sprinkle with garlic powder. Put squash in dish hollow side up.
- Cook bacon to desired doneness. Drain, blot, and crumble.
- Prepare stuffing according to its directions.
- In a small skillet, sautee onion, pepper, onion powder, and 1 tsp garlic powder. Stir this and the crumbled bacon, and 1/2 cup cheese into the stuffing mix.
- Divide among the zucchini. Cover with foil and cook for 35 to 40 minutes. Cover with the remaining cheese and cook for 5 to 10 more minutes.
- Travels well if covered with foil.
