Stuffed Squash

Makes 16 servings

Stuffed Squash

Ingredients
4 large zucchini
1 tsp garlic powder
2 tsp corn oil
1 medium yellow onion
1/2 green bell pepper
1 tsp onion powder
6 oz bacon
1 c cheddar cheese
6 oz stove top stuffing mix
Directions
  1. Preheat oven to 350. Lightly coat a 9- by 13-inch baking dish with cooking spray.

  2. Cut off ends of squash,cut in half lengh-wise, and remove guts. Sprinkle with garlic powder. Put squash in dish hollow side up.

  3. Cook bacon to desired doneness. Drain, blot, and crumble.

  4. Prepare stuffing according to its directions.

  5. In a small skillet, sautee onion, pepper, onion powder, and 1 tsp garlic powder. Stir this and the crumbled bacon, and 1/2 cup cheese into the stuffing mix.

  6. Divide among the zucchini. Cover with foil and cook for 35 to 40 minutes. Cover with the remaining cheese and cook for 5 to 10 more minutes.

  7. Travels well if covered with foil.
