Garlic Shrimp Pasta Recipe

Makes 4 servings


You can substitute whole wheat noodles, or any other kind of noodle you prefer. I just like the taste and texture of rice noodles. :)

Ingredients
1 tbsp extra-virgin olive oil
6 cloves garlic, minced
1/4 tsp red pepper flakes
1/2 cup dry white wine or chicken stock
1 lb raw shrimp, peeled and deveined
1/2 cup chopped fresh Italian parsley
1 tbsp light margarine
1 cup rice noodles
Directions
  1. Cook pasta as per package directions. Drain.

  2. Meanwhile, in a large non-stick skillet, heat oil over medium heat and cook garlic and red pepper for 1 minute (garlic should turn golden). Add wine or chicken stock and bring to a boil. Add shrimp and cook for 5 minutes or until they are firm and pink. Add parsley and margarine and cook until melted.

  3. Add cooked pasta to shrimp mixture, toss to coat well.
