You can substitute whole wheat noodles, or any other kind of noodle you prefer. I just like the taste and texture of rice noodles. :)
| 1 | tbsp extra-virgin olive oil |
| 6 | cloves garlic, minced |
| 1/4 | tsp red pepper flakes |
| 1/2 | cup dry white wine or chicken stock |
| 1 | lb raw shrimp, peeled and deveined |
| 1/2 | cup chopped fresh Italian parsley |
| 1 | tbsp light margarine |
| 1 | cup rice noodles |
- Cook pasta as per package directions. Drain.
- Meanwhile, in a large non-stick skillet, heat oil over medium heat and cook garlic and red pepper for 1 minute (garlic should turn golden). Add wine or chicken stock and bring to a boil. Add shrimp and cook for 5 minutes or until they are firm and pink. Add parsley and margarine and cook until melted.
- Add cooked pasta to shrimp mixture, toss to coat well.
