Adapted from the Vegetarian Time Complete Cookbook which uses dark sesame oil instead of teriyaki sauce.
| 2 | tbsp vegetable oil |
| 1 | lbs carrots, grated |
| 1 | lbs extra firm tofu, drained and crumbled |
| 1/3 | cup soy sauce |
| 1/3 | cup sesame seeds |
| 1 | tsp teriyaki sauce |
- In a skillet, heat the oil over medium heat and cook the carrots, stirring, for 15 minutes.
- Add the tofu and cook, stirring, until the carrots are soft, about 5 minutes more.
- Add the soy sauce and sesame seeds. Cook 1 minute more.
- Stir in the teriyaki sauce.
- Serve hot.
