| 2 | tsp olive oil |
| 1 1/2 | cups onion, chopped |
| 5 | cloves garlic, minced |
| 1 | tbs butter |
| 1 | lb mushrooms, sliced |
| 1 | tbs soy sauce |
| 1/4 | cup red wine |
| 1/4 | cup vegetable broth |
| 1 1/2 | cups wheat berries, cooked |
| 1 1/2 | cups long grain and wild rice |
| 1/4 | tsp thyme |
| 1/4 | tsp rosemary |
| 1 | tsp lemon zest |
- Heat olive oil in large pan over low heat; add onions and sweat until soft, about 10 min.
- Add garlic and continue cooking 5 min.
- Add butter and melt; add mushrooms and soy sauce, increase heat to medium, and cook 5-10 min. until mushrooms release moisture.
- Add wine and chicken broth and simmer 5 min. until wine starts to evaporate.
- Add wheat berries, rice, spices and heat through.
- Add salt and pepper to taste.
