Pumpkin Spice Muffins

Makes 12 servings

Vegan pumpkin muffins

Ingredients
1/4 cup butter
1 cup brown sugar
1/2 cup applesauce
2 cups pumpkin
1 tsp cinnamon
1 tsp nutmeg
2 1/2 cups whole wheat flour
2 tsp baking soda
Directions
  1. Cream butter and sugar. Add applesauce, pumpkin and spices. Mix well. Add flour and baking soda.

  2. Fill muffin tins full as these muffins do not rise much. Bake for 20-25 min in 350 degree oven.
