Apple Walnut Cranberry Muffin
| 2 1/2 | c. finely chopped apples |
| 1 | c. sugar |
| 1 1/2 | c. all-purpose flour |
| 1 | tsp. baking soda |
| 1/4 | tsp. salt |
| 1/2 | tsp. allspice |
| 1 | tsp. cinnamon |
| 1 | egg, beaten |
| 1/2 | c. vegetable oil |
| 1 | c. chopped walnuts |
| 1/4 | c Craisins, Sweetened Dried Cranberries |
Place paper baking cups in muffin pans. Preheat oven to 350 degrees. In small bowl, mix together apples and sugar. In a large bowl, sift together flour, baking soda, salt, allspice, and cinnamon. Add egg and oil to the dry ingredients. Stir in apple/sugar mixture. Finally, add walnuts and flavoring if you are using it; mix well. Fill baking cups 2/3 full and bake 35 minutes. Serve warm with butter and honey. Makes 46 small muffin.Categories
