| 1 | cup frozen spinach |
| 1 | medium onion, diced |
| 2 | tbsp garlic, diced |
| 2 | tbsp olive oil |
| 16 | ounces tofu |
| 6 | mushroom |
| 1 | cup vegetable broth |
- On medium-high heat, cook onions and garlic until fragrant.
- Add mushrooms, cover and cook until mushrooms begin to brown.
- Add crumbed tofu, frozen spinach and veggie broth.
- Stir continually until spinach is completely cook.
- Serve
