Delicious muffins from the Le Cordon Blue Home Collection Muffin cookbook.

Ingredients
| 375 |
g self-raising flour |
| 75 |
g plain flour |
| 115 |
g soft brown sugar |
| 150 |
g frozen blueberries |
| 2 |
eggs |
| 250 |
ml skim milk |
| 1 |
tsp vanilla extract |
| 125 |
g unsalted butter, melted |
| 2 |
tablespoons powdered sugar |
Directions
- Preheat oven to 415.
- Brush muffin tin with melted butter or oil.
- Sift flours into large mixing bowl, stir in sugar and blueberries and make a well in the center.
- Whisk eggs, milk, and vanilla together and pour into well.
- Add butter and stir with metal spoon until just combined. Do not overmix!
- Put into muffin tin and bake for 15-30 minutes depending on size of muffins.
