mimi's giant whole wheat banana strawberry muffins

Ingredients
2 eggs
1/2 c apple butter
1/5 c vegetable oil
3 medium bananas
2 c whole wheat flour
4 tbsp flaxseed, 1/4 flaxmeal
1 tsp baking soda
1 tbsp cinnamon
2 c. strawberries, frozen
1/2 tbsp sugar
Directions
  1. Preheat the oven to 375 degrees F (190 degrees C). Grease 12 large muffin cups, or line with paper liners.

  2. pulse frozen strawberries in food processor until in small chunks (approx 6 pulses). Add sugar to strawberries and set aside.

  3. In a large bowl, whisk together the eggs, applesauce, oil, vanilla and bananas.

  4. Combine the flour, baking soda and cinnamon;

  5. Stir into the banana mixture until moistened.

  6. Stir in the strawberries until evenly distributed.

  7. Spoon batter into muffin cups until completely filled.

  8. Bake for approx. 22 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly.

  9. Cool before removing from the muffin tins.
