This soup is excellent with a thick slice of bread. Adapted from The Vegetarian Resource Group http://www.vrg.org/catalog/convvegan.htm#recipes

Ingredients

ounces spinach, frozen chopped |
| 1 |
cup basmati rice |
| 1 |
small onion, finely chopped |
| 1 |
cup vegetable broth |
| 8 |
cups water |
| 1/2 |
teaspoon garlic powder |
| 1 |
pepper to taste |
| 6 |
ounces yogurt, plain or lemon soy (about 3/4 cup) |
Directions
- Place all the ingredients, except the yogurt, in a large pot and cook over medium heat for 30 minutes. Add yogurt and cook another 5 minutes. Serve warm.
