Gazpacho from South Beach Diet Phase I

Makes 5 servings

cold soup

Ingredients
2 1/2 cups tomato juice
1 cup chopped tomatoes, peeled and seeded
1/2 cup chopped celery
1/2 cup chopped cucumber
1/2 cup chopped green bell pepper
1/2 cup chopped green onion
3 tbsp white wine vinegar
2 tbsp olive oil
1 garlic clove, minced
2 tsp parsley, flat leaf chopped
1/2 tsp salt
2 1/2 g , equals 1/2 tsp Worcestershire
1/2 tsp pepper
Directions
  1. Finely chop all the ingredients.

  2. Combine and refrigerate (covered) overnight.

  3. Serve cold.
