Zucchini Casserole Recipe

Excellent as side or main dish - lo carb.

Ingredients
6 1/10 oz , turkey bacon 6 slices
3 small zucchini, sliced
3 plum tomatoes, sliced
1 onion, sliced
4 oz. shredded cheddar cheese
1/2 tsp pepper
Directions
  1. Parboil sliced zucchini and layer in the bottom of casserole dish sprayed with cooking spray. Next layer (in order):onions, tomato, pepper, cooked & crumbled bacon, & shredded cheese.

  2. Backe at 325 for 40-50 minutes.
