Arroz con Pollo

Ingredients

lb chicken breast |

cloves of garlic, minced |
| 2 |
tomatoes, peeled and diced |

green bell pepper |

tsp salt |
| 1 1/2 |
cups white rice, uncooked |
| 3 |
cups boiled water |
| 1/4 |
cup onion |
| 1 |
tbsp cilantro |
| 1 |
cup cheese |
| 1 |
tbsp lime juice |
Directions
- In a large frying pan, sautee chicken and onion in garlic, salt and lime juice until mostly cooked.
- Add the rice and boiling water. Stir all ingredients.
- Add the peppers, tomato, cilantro and cheese.
- Cook for 30 minutes.
