Simple and quick

Ingredients
2 cups carrots, grated
2 cups lettuce, torn
1/2 cups dates, chopped
2 tablespoons toasted almonds, chopped (optional)

Dressing:
2 teaspoons lemon juice
2 teaspoons olive oil
1/2 teaspoon peppercorns, fresh and crushed
1 salt to taste
Directions
  1. Toss all of the ingredients together.
