Sweet potato loaf

Makes 10 servings

sweet bread-like loaf.

Ingredients
185 g sweet potatoes, cooked, mashed
1/2 cup orange juice
1 large egg
1 cup oatmeal, ground
1/2 cup wheat germ
1/2 tsp cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking powder
1 tsp vanilla
2 tbsp blackstrap molasses
Directions
  1. Mix all ingredients together in a large bowl. (Can add nuts and up to five tbsp. of butter or oil). Pour into greased loaf pan.

  2. Bake at 350 for 45-50 minutes or until toothpick comes out clean.
