Shrimp Gumbo Recipe

The cajun way

Ingredients
1/2 cup flour
1/4 cup corn oil
16 cups water
3 pounds shrimp, raw, peeled
1 large onion, diced
1 bell pepper, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1/2 cup green onion, chopped
1/2 cup parsley, chopped
Directions
  1. Mix four and oil in a large pot. Cook very slowly stirring constantly until it is the color of DARK chocolate (this is roux, I use store bought). Quickly add all veggies except green onions, to arrest the browning followed by the water.

  2. Let cook for 45 min.

  3. Add shrimp and green onions and season to taste, cook for 20 more minutes.

  4. Serve with white rice. Offer tabasco and file'.
