The cajun way
| 1/2 | cup flour |
| 1/4 | cup corn oil |
| 16 | cups water |
| 3 | pounds shrimp, raw, peeled |
| 1 | large onion, diced |
| 1 | bell pepper, chopped |
| 2 | stalks celery, chopped |
| 2 | cloves garlic, minced |
| 1/2 | cup green onion, chopped |
| 1/2 | cup parsley, chopped |
- Mix four and oil in a large pot. Cook very slowly stirring constantly until it is the color of DARK chocolate (this is roux, I use store bought). Quickly add all veggies except green onions, to arrest the browning followed by the water.
- Let cook for 45 min.
- Add shrimp and green onions and season to taste, cook for 20 more minutes.
- Serve with white rice. Offer tabasco and file'.
