green apple fennel salad

Makes 2 servings

This is a crisp, flavorful salad that everyone in my house loves. I sometimes have two servings for a meal, along with leftover salmon or other lean protein.

Ingredients
1 granny smith apple
1 cup fennel (one small bulb)
2 T vinegar, brown rice
1 T canola oil
1/2 t ground ginger
1/2 t yellow mustard seed
1/4 t salt
Directions
  1. In a medium bowl, whisk together the brown rice vinegar, canola oil, ginger and mustard seed.

  2. Core the apple by cutting it vertically around the core in four pieces. Slice each piece into thin planks, then cut into matchsticks approx. 1/4" x 1/4".

  3. Remove green tops and leaves from fennel bulb. Cut in half lengthwise (through the core), remove core with a paring knife and slice very thinly into 1/8" slices, or use a vertical slicer or mandoline.

  4. Add apples and fennel to the bowl. Toss gently with a fork. Sprinkle salt over the salad and keep covered and refrigerated until served.
