Ingredients

lb asparagus |

medium zucchini |
| 1 |
medium squash |
| 1 |
medium green pepper |
| 1 |
medium red pepper |
| 1 |
medium red onion |

tbsp extra virgin olive oil |
| 1 |
tsp salt |
| 1/4 |
tsp black pepper |
Directions
- Heat oven to 450 degrees.
- Cut veggies into bite-sized pieces.
- Toss together with oil, salt & pepper.
- Lay in single layer on cookie sheet.
- Bake 30 minutes, turning occassionally until golden brown and tender.
