Honeydew Tabbouleh Recipe

Makes 6 servings


Twist on traditional tabbouleh with honeydew melon.

Ingredients
1 cup water
3/4 cup bulgur
1/4 cup olive oil
1/4 cup chopped mint
3 tablespoons lime juice
1/4 cup chopped red onion
1 1/2 cup chopped honeydew melon
Directions
  1. Bring the water to a boil and then add to bulgur in large bowl, cover securely and let sit for 30 minutes.

  2. Meanwhile, blend mint and oil until smooth.

  3. Chop the onion finely and the honeydew into 1/2 in pieces.

  4. Drain any excess water from the bulgur, then mix in oil, mint, lime juice, onion and melon.

  5. Best the next day.
