Twist on traditional tabbouleh with honeydew melon.
| 1 | cup water |
| 3/4 | cup bulgur |
| 1/4 | cup olive oil |
| 1/4 | cup chopped mint |
| 3 | tablespoons lime juice |
| 1/4 | cup chopped red onion |
| 1 1/2 | cup chopped honeydew melon |
- Bring the water to a boil and then add to bulgur in large bowl, cover securely and let sit for 30 minutes.
- Meanwhile, blend mint and oil until smooth.
- Chop the onion finely and the honeydew into 1/2 in pieces.
- Drain any excess water from the bulgur, then mix in oil, mint, lime juice, onion and melon.
- Best the next day.
