| 500 | g Italian sausages - approx. 8 total |
| 2 | medium onions, chopped |
| 3 | celery stalks, chopped |
| 1 | green pepper, chopped |
| 240 | g pasta, rigatoni |
| 1/4 | cup tomato paste |
| 2 | cups mozzarella cheese, grated |
| 1/3 | cup Parmesan cheese, grated |
| 1 | tbsp dry basil |
| 1/4 | tsp red pepper flakes |
- Cook sausages in a frying pan until almost done. Remove from heat, drain fat and slice each sausage on the diagonal.
- Meanwhile, in a pot of boiling water, cook pasta until tender but firm. Drain and set aside.
- While pasta and sausages are cooking, saute onions, celery and green pepper until tender.
- Add vegetable mixture to sliced sausage mixture, add tomato paste, basil and pepper flakes, mix well. Cook covered over low heat until heated through.
- Put noodles and sausage mixture in a large casserole dish or small roasting pan and combine. Fold in mozzarella cheese.
- Sprinkle parmesan cheese over top, and place in preheated 350F oven, covered, for 30 minutes or until hot and bubbly.
