Hot Pepper Chicken Recipe

Any pepper will work. Anaheims are used here.

Ingredients
16 oz. chicken, breasts boneless
1 teaspoon Taco Seasoning
3 anaheim peppers
4 oz. Monterey jack cheese sliced or shredded
Directions
  1. Season the chicken with the taco seasoning; grill or pan fry until done. Place chicken on a baking sheet.

  2. Slit anaheim or jalapeños lengthwise and open flat. Scrape out seeds and membranes. Arrange them on top of the chicken. You'll need 2 or enought to cover each breast . Cover anaheim or jalapeños with 1 oz. of cheese.

  3. Bake at 350ºF for about 10 minutes, until the cheese is melted.
