Any pepper will work. Anaheims are used here.
| 16 | oz. chicken, breasts boneless |
| 1 | teaspoon Taco Seasoning |
| 3 | anaheim peppers |
| 4 | oz. Monterey jack cheese sliced or shredded |
- Season the chicken with the taco seasoning; grill or pan fry until done. Place chicken on a baking sheet.
- Slit anaheim or jalapeños lengthwise and open flat. Scrape out seeds and membranes. Arrange them on top of the chicken. You'll need 2 or enought to cover each breast . Cover anaheim or jalapeños with 1 oz. of cheese.
- Bake at 350ºF for about 10 minutes, until the cheese is melted.
