Leftover Mexican Fiesta Recipe

tangy filling good for you mexican-ish side dish

Ingredients
1 cup couscous
2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
2 tbsp jalapeno, chopped
1 cup onion, chopped
1 tbsp extra virgin olive oil
1 cup cilantro, chopped
1 1/2 tbsp garlic, chopped
1/2 cup tomato, chopped
16 tbsp picante sauce
1 cup water
Directions
  1. cook couscous in microwave WITHOUT butter, salt. sit off to side

  2. heat garlic and bell peppers in evoo over low-med heat untill slightly soft

  3. add onion, jalapeno, cilantro. cook over medium heat for 8-10 minutes, stiring often.

  4. add tomato, picante sauce, couscous, and water to mix. allow to heat through and serve
