Ingredients

cups cooked long grain rice (20045) |

cups (8 oz.) light Monterey Jack cheese (109296), shredded |
| 1 1/2 |
cups cooked chicken breast, chopped |
| 1 |
can (12 oz.) evaporated milk |
| 1/2 |
cups red onions, finely chopped |
| 1 |
large egg, lightly beaten |
| 2 |
egg whites |
| 1/4 |
cup fresh cilantro, finely chopped |

tbsp butter or margarine, melted |

tbsp jalapenos (11632), diced (optional) |
Directions
- PREHEAT oven to 350 degrees. Grease a 2-quart casserole dish.
- COMBINE ingredients well in dish.
- BAKE 45 to 50 minutes or until knife inserted in center comes out clean.
