Chicken & Rice Casserole

Adapted from carolinarice.com. long grain rice, light Monterey Jack cheese, cooked chicken breast, evaporated milk, red onions, egg, egg whites, fresh cilantro, butter or margarine, jalapeno pepper cvt

Ingredients
2 cups cooked long grain rice (20045)
2 cups (8 oz.) light Monterey Jack cheese (109296), shredded
1 1/2 cups cooked chicken breast, chopped
1 can (12 oz.) evaporated milk
1/2 cups red onions, finely chopped
1 large egg, lightly beaten
2 egg whites
1/4 cup fresh cilantro, finely chopped
2 tbsp butter or margarine, melted
1 tbsp jalapenos (11632), diced (optional)
Directions
  1. PREHEAT oven to 350 degrees. Grease a 2-quart casserole dish.

  2. COMBINE ingredients well in dish.

  3. BAKE 45 to 50 minutes or until knife inserted in center comes out clean.
