Easy and delicious
| 2 | chicken breast |
| 1/4 | cup fat free sour cream |
| 1/2 | oz feta |
| 1 | cloves garlic, minced |
| 5 | oz. frozen spinach, thawed and drained |
| 2 | oz. prosciutto di parma, (2 slices) |
| 2 | slices tomato |
| 1/4 | tsp. salt |
| 1/4 | tsp. pepper |
- In a bowl, mix together sour cream, feta, spinach, garlic, salt, and pepper until well blended.
- Butterfly the chicken breasts, being carefully not to cut all the way through.
- Spoon 1/2 of the spinach-feta mixture into each breast, followed by a slice of tomato.
- Wrap each breast with a slice of prosciutto.
- Place chicken in a shallow baking dish. Cover.
- Bake at 375 deg. F for about 40 minutes, or until chicken juices run clear.
