Makes 4 servings

spicy moroccan-style

Ingredients
1 red onion
150 g aubergine
2 courgettes
2 carrots
2 cups celery
250 g canned tomatoes
2 tablespoons olive oil
Directions
  1. fry all vegestables a few minutes, season with moroccan mixed spice, vegetable stock, salt and pepper add tomatoes and enough water to cover. Simmer for an hour.
