tasty side dish i tried to re-create from one of the lean cuisine spa dishes
| 10 | oz frozen spinach |
| 8 | oz mushrooms, sliced |
| 3 | oz carrot, sliced |
| 1 | clove garlic |
| 1 | cup onion |
| 2 | cup Uncle Ben whole grain meadly ready rice |
| 2 | tbsp extra virgin olive oil |
| 2 | tbsp rosemary |
- thaw and drain frozen spinach
- chop mushrooms
- julienne carrots
- mince garlic and onion.
- in a large skillet over medium heat, add all olive oil, garlic,onion, and mushrooms. Once mushrooms begin to cook down, add spinach and stir. 5 mintues later, prepare Uncle ben's whole grain medley ready rice as package instructs and add cooked contents to skillet. stir. add carrots on top. serve.
