Garbanzo Bean Salad Recipe

Makes 5 servings


Vegetarian salad--you need 2 cups of garbanzo beans, but the data base shows a calorie count of over 1400, the can of beans shows closer to 365 calories, so I had to modify to get the right calorie count, this probably throws off the protein,carbs etc.

Ingredients
1/4 cup oil
2 tbsp vinegar, white balasamic
1 tsp curry powder
1/2 tsp salt
1/4 tsp black pepper
3/4 cups cooked chickpeas(s/b 2cups see note*)
8 oz extra firm tofu, drained and diced
1/2 cup celery, diced
2 tbsp red onions, minced
Directions
Mix first five ingrediants thur black pepper. Add last four items and toss. Serve on a bed of lettuce
