Apple-Blueberry Oatmeal Crisp Recipe

Ingredients
1/2 cup rolled oats
4 tbsp brown sugar
1 tbsp whole wheat flour
1 tbsp cold unsalted butter
6 apples, peeled, cored, and thinly sliced (firm are best)
1 cup blueberries, frozen (or cranberries)
1 tbsp fresh lemon juice
1/4 tsp cinnamon
1/8 tsp ground nutmeg
Directions
  1. Preheat the oven to 375 degrees F, spray an 8-inch-square baking dish with nonstick spray.

  2. In a small bowl, combine the oats, 2 tablespoons of the brown sugar, and the flour; with two knives or your fingers; work in the butter until crumbly.

  3. In a large bowl, combine the apples, blueberries (or cranberries), the remaining 2 tablespoons of brown sugar, the lemon juice, cinnamon, and nutmeg; toss to combine. Spoon into the pan; sprinkle with the oats mixture. Bake until the filling is bubbling and the topping is golden brown, 35-40 minutes.
