Mediterranean Frittata

Makes 6 servings

Frittata with mozzarella, proscuitto, zucchini and pepper

Ingredients
1/2 cup onion, chopped
1 tsp olive oil
1 oz proscuitto
3 oz mozzarella,grated
6 oz
2 cups chopped zucchini
1 large egg
1 oz parmesan grated
1 oz roasted red pepper, chopped
Directions
  1. Saute onion in olive oil, add zucchini and cook until soft.

  2. Mix egg, egg beaters, cheeses, red pepper and proscuitto together. Add seasonings of your choice, salt and pepper.

  3. Pour egg mixture in pan over onion and zucchini.

  4. Cook on stovetop for a few minutes and then put in 350 preheated oven, and cook until set, about twenty minutes
