Frittata with mozzarella, proscuitto, zucchini and pepper

Ingredients

cup onion, chopped |

tsp olive oil |
| 1 |
oz proscuitto |
| 3 |
oz mozzarella,grated |
| 6 |

| 2 |
cups chopped zucchini |
| 1 |
large egg |
| 1 |
oz parmesan grated |
| 1 |
oz roasted red pepper, chopped |
Directions
- Saute onion in olive oil, add zucchini and cook until soft.
- Mix egg, egg beaters, cheeses, red pepper and proscuitto together. Add seasonings of your choice, salt and pepper.
- Pour egg mixture in pan over onion and zucchini.
- Cook on stovetop for a few minutes and then put in 350 preheated oven, and cook until set, about twenty minutes
