This is good. I like to put 3 T. crumbled bacon in it, too. Would've entered it, but couldn't find it.

Ingredients
| 1 |
fennel bulb, sliced 1/4-inch thick |
| 1 |
leek, sliced 1/4-inch thick |
| 8 |
oz. potatoes, sliced 1/4-inch thick |
| 2 |
T. olive oil |
| 2 |
tsp. salt |
| 1 |
tsp. pepper |
| 1/4 |
c. Parmesan cheese, grated |
Directions
- Preheat oven to 425 degrees.
- Spray a 9 X 13 casserole dish with vegetable cooking spray.
- Put fennel, leek & potato in baking dish.
- Add olive oil.
- Add crumbled bacon if you have it.
- Add salt and pepper.
- Put in oven and cook for 25-30 min.
- Top with cheese at the end.
