Lisa's Fennel, Leek & Potato Side Dish

Makes 6 servings

This is good. I like to put 3 T. crumbled bacon in it, too. Would've entered it, but couldn't find it.

Ingredients
1 fennel bulb, sliced 1/4-inch thick
1 leek, sliced 1/4-inch thick
8 oz. potatoes, sliced 1/4-inch thick
2 T. olive oil
2 tsp. salt
1 tsp. pepper
1/4 c. Parmesan cheese, grated
Directions
  1. Preheat oven to 425 degrees.

  2. Spray a 9 X 13 casserole dish with vegetable cooking spray.

  3. Put fennel, leek & potato in baking dish.

  4. Add olive oil.

  5. Add crumbled bacon if you have it.

  6. Add salt and pepper.

  7. Put in oven and cook for 25-30 min.

  8. Top with cheese at the end.
